Kenya Ngugu-ini | Espresso

Kibirigwi Farmers Cooperative Society operates the Ngugu-ini Factory. There are about 1,200 contributing members with farms approximately 1/8 hectare each. 

The farmers bring their cherry to the factory for sorting and processing same day it is picked. The coffee is depulped then fermented underwater for 15–24 hours. It is then washed three times and spread on metallic drying tables for 6–16 days.
