Jairo Arcila is the producer of La Pradera, an experimental farm in Quindio, Colombia known for its experimental processing methods and interesting varieties. We were fortunate enough to get our hands on this pearler of coffee, a natural process Castillo variety. Think winey, cola, grapes, big tangy body and finish, but so clean and complex. This will be a bonkers espresso.
