Helena is Carlos’ mum. Carlos is the Australian head of Cofinet, a supremely focussed company that produces some immaculate coffees in Colombia. Their farm, La Pradera, experiments with new varieties, processing methods and agriculture practices. Helena’s farm, Finca Maracay, sends its production of cherries to be produced at La Pradera.

This lot is a natural-ish process, it is anaerobically dry fermented for 12-18 hours then pulped and left to dry with mucilage on. This gives the coffee a winey, fruit forward profile, bursting with strawberry, cherries, dark chocolate and lively acidity.
