ABOUT THE BEANS:

Carlos Ernelio Ortiz owns a 20 hectare farm called Finca El Pedrero in the La Paz region of Honduras, growing coffee and also avocados. Harvest takes places from January to April.
The coffee is picked ripe and sorted for quality, then placed on raised beds or patios to dry for a month or more.
